This project, sponsored by E&J Gallo Winery, involved developing methods to recover wine during a candle filter's water push, retrieve wine not drained from the filter's buffer and slurry tanks and increase the capacity of the filter. We adjusted operation of the current water push, altered some of the system's programming and analyzed the field and filter pump capacities. From these results, we made several recommendations to Gallo, which will improve their candle filter and result in higher profits.
